Kefir can be used for more than just savory dishes. In this tangy, fresh cucumber salad kefir marinates with garlic, apple cider vinegar, and cumin to become deliciously fresh salad.

INGREDIENTS:

  • 2 medium cucumbers, quartered lengthwise and diced

  • 2 garlic cloves, minced

  • 1/4-1/2 tsp. sea salt, or to taste

  • 1 tsp. apple cider vinegar or well-fermented kombucha

  • 1/2 cup milk kefir

  • Pinch of ground cumin

INSTRUCTIONS:

  1. Combine all ingredients in a medium-sized bowl.

  2. Marinate in the refrigerator, covered, for 15 minutes before serving.
